Sweeteners in Cakes and Desserts - Glycemic Index & Their Impact on Your Body

Have you ever sifted through the Internet to find cake and buttercream recipes and made them from scratch yourself?

If so, did you like what you added into the dessert, or no?

Bunny has previously baked your normal cakes before  baked normal before, and was astounded by the amount of white refined sugars inside them.


Frosting on a normal celebration cake can contain up to 5 cups or more icing sugar! And no wonder kids are hyperactive, and Bunny gets a major sugar crash that causes her to feel sluggish and terrible after.

Why does this happen?

Let's take a look at Glycemic Index to understand it better. 

Glycemic index measures how rapidly a certain food converts into the most basic form of energy. 

Glycemic Index (also referred to as GI) can help you understand how a food will impact your feelings. Essentially, the higher the GI value, the more dramatically the food item can increase your blood sugar levels, which in turn can affect your mood and body’s energy.

Foods receive a score based on a 100 point glucose index, with a maximum score of 100 being pure glucose. Foods with a lower GI value tend to have more complex forms of carbohydrates, and are higher in fiber, protein, fat and/or water content.

This allows for a more sustained energy release.

*Keep in mind that the Glycemic Index is based on blood glucose levels, but there are other factors and measures by which sugars affect the body.

Bunny Bakery uses Organic Brown Rice Syrup and Stevia in a few of our products like raw vegan "cheesecakes", which is also known to be diabetic-friendly.

Stevia Facts
  • Stevia has a low glycemic index (less than 1), helps to stabilize blood glucose levels. It is suitable for diabetics and those concerned with blood sugar, or dealing with any gastrointestinal issues such as candida (as it does not contain any yeast-feeding sugar).
  • Stevia is up to 300 times sweeter than white sugar (we use sparingly and accordingly) and contains almost zero calories.

If you have a need to minimise your sugar intake, we will be gladly to do so!
 
We have also had previous requests to bake with Monkfruit Sweetener and Erythritol in our cakes, and have accommodated requests from our clients!  

Just note that texture or flavour might change with such  sugars. They will not be as sweet or flavourful like sugar as they do not caramelise. Do contact us to check on availability for these sweeteners. 

Ultimately, our desserts use unrefined sugars and are generally less sweet than most of the other desserts sold in commercial bakeries.

Bunny Bakery Brownies - Why Wholefoods?

Imagine waking up in the morning, hopping around markets and sourcing for the best quality Japanese sweet potatoes, nuts and beans... While other bakers or pastry chefs work with heavy bags of flour and blocks of butter. 

They can whip up a brownie within 1 hour, while we can take for up to 48 hours.

Our popular Fudgey Flourless Cacao Brownies are made with activated black beans. This means that they have been soaked for 12 hours and slow cooked for another 8 hours for us to absorb their nutrients better.

There really is no easy other way out. We want to provide the most nutritious product and avoid using canned beans that are high in sodium.

Other flavours of brownies also contain whole foods: Black Sesame (Black Beans), Cinnamon Swirl (Pumpkin & Sweet Potato)  and Matcha Macadamia – where quality Japanese Sweet Potatoes (Purple skin with white flesh)  are used. 


Recently, we launched our Red Bean Fudge brownies that are made from scratch with homemade red bean paste and no refined sugars.

We aim to create healthy options for you that you can have on a frequent basis, while keeping your body and health goals in check!

Many customers have feedback that our brownies and bliss balls makes them:
  • fuller for longer periods of time due to the added fibre
  • no experience with sugar spikes during mid day 
  • tastes like an actual brownie

They are great for breakfast, snack, or even a pre or post workout fuel as well!

We strive our best to combine the 3 key factors of flavour, quality and healthful-ness in our treats.

Based on the nutrition facts given, we are happy to create desserts that create a delicate balance. This is also why we don't advise storing our whole food brownies for more than a week in the fridge. They have no preservatives and additives. 

Nonetheless, they usually don't last past 3 days.

The Story Of Bunny Bakery

Andrea is the master-hands behind Bunny Bakery. 

“Bunny” came about for her unusual obsession with leafy vegetables (miracle child, her relatives say). She also loves “hopping" and hunting  for the best desserts in town.

Her discovery of wholefoods baking came about after a huge scare from her Mother who suffered from clogged arteries. She had to be sent to the hospital immediately for surgery. 

Andrea remembered that night so vividly.

This incident has also caused her
 family to switch to a healthier lifestyle overnight, but it wasn't an easy feat for Andrea.

​She didn’t want to compromise her love for desserts like brownies and cakes!

And so,
countless late night experimentations and taste tests were done to produce the wholesome and guilt-free alternatives that Bunny Bakery has today.

Andrea is also a brunch and dessert foodie. 

While living in Australia, she was exposed to Instagram-worthy Acai bowls (before it arrived in Singapore), bliss balls and fell in love with allergen free desserts (gluten-free pancakes anyone?!) when pursuing her dual degree in the Media field.

​She was convinced that we all can have sweet treats that have great taste and nutritional benefits. 

Her experience of being a raw vegan in Bali further cemented her beliefs that food should and can be our medicine!
​Andrea is a certified Raw food chef with Certifications from leading vegan culinary school – Matthew Kenney Culinary Academy and Sayuri Healing Foods. 

She believes in intuitive eating, following a well-balanced whole foods diet while maintaining an active lifestyle! Andrea aims to educate all on how to lead a more healthful life.

​Crazy experimentations still continue in Bunny's Burrow today, as Andrea is constantly excited about creating new wholesome items and cake designs on the menu. 


With that, Bunny Bakery looks forward to creating a healthier treats to nourish your mind and body!
